The following is my recipe for homemade pizza. I have used several different recipes in the past but now have come up with my own. You may use any part or all of this recipe. You may like a store bought crust or jarred sauce.
1 cup water
1 package yeast (2 ¼ teaspoons)
3 tablespoons sugar
¼ cup olive oil
3 cups flour (or 1 ½ cups white flour and 1 ½ cups wheat flour)
1 teaspoon salt
In a pyrex cup measure water and microwave for 30 seconds (should be less than 110°). Add yeast and sugar. Stir gently and let rest for 5 minutes. It will be spongy. Add olive oil to yeast mixture.
In a small bowl combine flour and salt. Pour yeast mixture into center and mix. Dough will be sticky. Knead the dough on a floured board adding more flour if necessary to make a smooth dough. Add small amount of olive oil to empty bowl. Place dough into bowl. Turn dough to coat with light layer of oil. Cover with plastic wrap and let bowl sit in a warm place, free of drafts. Let rise from 5 minutes to 2 hours. The longer you let it rise, the more bread-like the dough will become.
Prepare 2 pizza pans or cookie sheets with spray oil and dust with cornmeal. Punch down the risen dough, divide in half and roll out into large pizzas.
Optional: Brush crust edges with olive oil.
(Prepare while dough is rising)
1 can (28 ounces) Italian plum tomatoes, undrained
6 ounce can tomato paste
2 garlic cloves, minced
1 ½ teaspoon dried basil
Freshly ground black pepper
Place all ingredients in saucepan over medium heat. Crush tomatoes with back of spoon. Bring mixture just to a boil, then reduce heat to low. Simmer the sauce, stirring occasionally, until thick and flavorful, 30 minutes to 1 hour. Remove from heat.
1 quart spaghetti sauce or Tomato Sauce (above)
1 pound fresh mozzarella cheese, sliced thinly
Grated parmesan cheese
Pepperoni, Canadian bacon and pineapple, sliced meatballs, fresh basil leaves, or sliced vegetables (tomatoes, onions, bell peppers)
Preheat oven to 425°. Heat sauce in a pan. Spread pizza dough with sauce, leaving edges free. Add mozzarella cheese. Top with optional toppings. Sprinkle with grated parmesan cheese. Bake in oven for 15 minutes or until crust is golden.
