I have made many different recipes of chocolate chip cookies. After tweaking and changing different ingredients, my family says that I finally got it. So here are my Chewy Chocolate Chip Cookies:
2 1/4 cups all purpose flour
1 teaspoon salt
1 teaspoon baking soda
1/2 cup granulated sugar
1 cup brown sugar, firmly packed
1/2 cup butter, softened (1 stick)
1/2 cup shortening
1 teaspoon vanilla extract
12 ounces semi-sweet chocolate chips (2 cups)
Preheat oven to 350 degrees. Combine flour, salt and baking soda into your dry ingredient bowl and set aside. In KitchenAid bowl, combine sugars, butter, shortening and vanilla. Beat at slow speed. Add eggs one at a time and mix. Add dry ingredients and mix slowly then at faster speed. Remove bowl from mixer and stir in chocolate chips. Drop mixture by rounded teaspoonfuls onto non-greased cookie sheets. Bake 10 to 12 minutes or until edges appear golden and centers appear puffed.
Allow to cool 2 to 3 minutes until cookies set up. Remove from cookie sheets to cooling rack.
I love my expanding cooling racks. Makes about 4 dozen cookies.
Insert into plastic Halloween bags for some nice treats.
